OK-so my dear husband-who is also a great editor not only in my professional life but really in every area of my life-was in the homeschool classroom yesterday. He made a discovery that still has me scratching my head, wondering “How did I miss this?” I’ll let the blog audience try to decide for themselves why this is so – just – WRONG! Delicious Basil /Tomato Chicken Sandwich
Here’s a fabulous recipe to wow your family. My husband is the pickiest eater ON THE PLANET and he loves this. It is best served at dinner with a fresh side of some veggie or fruit. My recipe is for 4 people, but if your family is larger, just double it. I promise it will all be eaten……..
2 chicken breasts-sliced halfway through and pounded flat
1 french loaf of bread, sliced halfway down the middle lengthwise
sun-dried tomatoes or sun-dried tomato basil pesto sauce
fresh basil leaves-12-16
butter and oil (for pan cooking the chicken)
1/2 cup flour-all purpose
1 tsp black pepper
1 tsp salt
1 tsp smoked paprika
Fresh Mozzarella medallions
Balsamic Vinegar to taste
Brush french loaf halves with butter and place under the broiler for 3 minutes, or until slightly browned. Remove from oven and set aside for later. Heat skillet to medium high heat. Add about a tablespoon of oil and a tablespoon of real butter to melt. Combine flour, salt, pepper and paprika on a plate. Coat each piece of chicken with flour mixture. Cook each piece of chicken until browned on both sides (about 3-4 minutes per side). Once done, place cooked in a single layer on the bottom half of the french bread. place mozzarella medallions on top of chicken. Broil for another 3-4 minutes, or until cheese is melted. While the cheese melts, spread the top half of the french bread with the pesto or line with sun-dried tomatoes. Carefully pour the vinegar a top the tomatoes-to taste (we like a lot of the vinegar…you may not like it at all). When cheese is melted, remove from the oven. Top with basil leaves and top half of the french bread. Slice into four servings. Serve immediately with a big smile and a happy heart!

Farm Girls
Recently, the nieces were out for a fun overnight here at the farm. This was one of my favorite pics coming back up from a bit of time showing them that a little dirt never hurt anyone……..unless you decide to skip the bath later. I have to admit-I don’t always get the shower in. My husband, on the other hand, takes 2-3 showers a day. No matter how often we bathe on the outside, though, it is getting clean on the inside that matters. The Bible teaches that “If we admit that we have sinned….. (Jesus) is faithful and just -true to His own nature and promises and will forgive and continuously CLEANSE us from ALL unrighteousness.” (1 John 1:9-ampl.) Isn’t that wonderful?
